Banko Gotiti processing station is located in the coveted Gedeb district, the southernmost district of Ethiopia’s famous Gedeo zone—it is well known for its gifted processing conditions & experienced growers.
Smallholder farmers provide cherries to the station, with each farm growing approximately 3.5 hectares of coffee. Most of the farmers also plant the ensete, a genus of monocarpic flowering plants. It is a fruit-less relative of the banana tree whose pulp is scraped & packed into cakes, fermented underground, & then toasted as kocho, a staple starch in the area. The natural processed coffees are hand-sorted upon arrival, then transported to raised beds to dry fully for around three to four weeks. Finished dried cherry pods are then stored locally to rest, which allows internal moisture to equilibrize, & then they are de-husked.
ROASTMASTER NOTES:
Renowned for soft noters of blueberry, I would never roast this elegant Ethiopian coffee as anything other than a light roast. This coffee shines with a rich cocoa body embracing sweet notes of vanilla rounded out by a subtle & refreshing strawberry & blueberry finish. Best brewed as a pour over, this is a must-have coffee for the coffee enthusiast!
