When coffee was introduced to El Salvador in the late 1880s, it quickly displaced indigo as the country’s chief export—today, El Salvador produces some of the world’s most interesting and complex coffees. We sourced this coffee from the Santa Rita and the El Molino farms located near the town of Apaneca within the department of Ahuachapan.
Our team values a family-owned company—cultivated and processed by JASAL, Jose Antonio Salaverria and his sons take great pride in their meticulous attention to detail including year-round farm management to quality control in the cupping lab and everything in between.
I decided to light-roast this exceptional coffee to best reveal the inherent complexities. Brewed as a pour-over, notes of rich cocoa and fresh cherry give way to a honey-like finish—and regardless of your roast preference, you will find this coffee full-bodied and comparable to some of our medium-roast offerings.

From our Roast Master: The rich history of the Hambela Coffee Estate begins at the end of World War II when the Ethiopian Emperor awarded Muluemebet Emiru, the first African female pilot, with land in the Guji & Sidama zones. METAD is a third-generation family-business that is modernizing the coffee industry. Through Aman Adinew’s leadership, METAD has strengthened the local community including a 70% women workforce, educational opportunities, & healthcare for employees.
METAD provides technical assistance and shares modern farming equipment with other local farmers. It also has the first and only private state-of-the-art SCAA certified coffee quality control lab on the African continent used to train both domestic and international coffee professionals.
This green coffee is indigenous heirloom cultivars from the Guji region and is a full natural & dried on raised beds processed. I roasted this coffee to a light roast to best highlight the fruit notes synonymous with Guji coffees—fresh passion fruit moves to an herbal body & finishes with subtle mango. These delicate flavours are best realized using your favorite manual brew—enjoy!

Coffee was introduced to land-locked Boliva around the time of independence from Spain in 1825. Production was limited to the Yungas region—a fertile & tropical area bordering the high-altitude eastern slopes of the Bolivian Andes. Bolivia’s Agrarian Revolution in the 1950s gave rise to a wave of migration & specialty coffee to this region.
Today, coffee production has federal government funding & support which fuels knowledge for the farmers & provides logistical support for moving their coffee to international markets, all while protecting quality & traceability.
Fausto Machaca & his family have been growing coffee on a small farm in the Yungas region for 50 years. Fausto harvests the cherry then de-pulps, ferments, washes, & dries the beans on patios & raised beds to produce an exceptional green coffee. I roasted this coffee to a medium to feature the bright plum notes followed by a medley of nougat & almond resulting in a sweet & complex coffee.

Large by Costa Rican standards, La Candelaria Estate is located near Palmares in the Alajuela province in the West Valley—one of the country’s most historic coffee regions. La Candelaria is 150 hectares of blended coffee production & natural forest preserve. Owner & manager Hans Aeberhard maintains the Rain Forest Alliance certification through both a native wildlife protection program & a reforestation program on the estate.
Hans processes and mills on site to oversee a variety of techniques. In Costa Rica, it is common for even small family plots to exercise extreme levels of mastery over various degrees of honey & natural profiles made at home. This washed lot is a standard depulped, fermented, washed & screen-dried blend of cultivars from across La Candelaria. For this exceptional coffee, I decided on a medium roast with less development time to highlight the range & complexity of nutty, cocoa & dark cherry notes.

The New Oriente region in Guatemala grows some of the world’s best coffee plants, and it’s here you’ll find Ricardo Zelaya’s showpiece La Finca Carrizal. Our team values the quality of this excellent coffee as well as Ricardo’s commitment to environmental and social responsibilities. Environmentally, 98% of Carrizal is shade-grown, and pulp from the wet mill is transported for composting and then used as an organic fertilizer in the coffee fields. Ricardo is also dedicated to helping community youth achieve meaningful opportunities through a series of scholarship funds.
One of our perennial favourites, I roast this coffee to a medium-dark—the result is a delicate chocolate and nutty profile with a subtle dried fruit finish. Roasted just into the second crack, this coffee works well in an auto-drip, but an immersion or pour-over method is best to exact the taste profile. Regardless of how you brew, learning about Ricardo’s commitments to his local community makes this coffee even more enjoyable!

The Oaxacan coffee growing region, found within the Sierra Madre del Sur coastal mountain range, is home to numerous small family farms, each consisting of just a few acres of land. More than 4000 producers from 134 communities and 45 producer associations have consolidated their efforts into an umbrella cooperative called Coordinadora Estatal de Productores de Café del Estado de Oaxaca or, in short form, CEPCO.
The co-op has helped producers gain access to credit and certifications, led the leaf rust recovery effort, and has supported thousands of producers with programs to renovate their farms and increase their production of organic fertilizers. Investments for road improvements and the establishment of local warehouses and dry-mill facilities are also coordinated through CEPCO. Their collective efforts have established superior producer income to support better agricultural practices and an improved livelihood.
Mexican Altura coffee beans are considered to be of the highest quality. Higher elevations with thinner atmospheres and cooler temperatures mean the plants grow slowly—the result is a denser, richer bean with complex flavours. Roasted to a medium roast, this coffee has soft notes of pecan and brown sugar followed by a refreshing and subtle orange-citrus finish. One sip and you’ll see what you’ve been missing!

Within the department of Madriz, Nicaragua is the municipality of San Juan del Río Coco. This green bean was sourced from the family-owned farms organized around Unión de Cooperativas Agropecuarias de San Juan del Río Coco (UCA). The cooperative boasts 420 members—including 80 women—who each cultivate an average of 12 acres of coffee. The cooperative provides marketing, technical assistance, & small business lending to all its members.
Varietals of Bourbon, Catuai, Caturra, & Typica are fully washed & dried in the sun. I decided on a medium roast with less development to produce a unique & refreshing coffee—with notes of pecan, cocoa, & a soft mandarin orange finish, this coffee will help ease you into your day.
