Costa Rica Aquiares Red Honey—from the Estate of Aquiares, one of Costa Rica’s most historic coffee farms. 😎 Sitting high on the slopes of the Turrialba Volcano, coffee plots are interlaced with over a dozen natural springs & almost 20 kilometers in streams—all protected with buffer zones. The community of Aquiares sits in the midst of the farm & is home to almost 2,000 people. Here, farmers learn better farming methods, improve working conditions, & focus their care on the community & the environment.

Two processes for removing the flesh of the coffee cherry from the seed include wet processing & natural. Wet processing involves removing flesh by washing & then drying the seed. The natural process, also known as the dry process, involves drying the coffee fruit whole before removing the flesh. The beans are dried to approximately elven percent moisture content. Developed largely in Costa Rica, the honey process involves components of both methods. The cherry peel is removed, but some amount of the fleshy inside, or the mucilage, remains while the beans are dried. The sweet and sticky mucilage is where we get the term honey processing—yellow, red or black indicates the amount of light the coffee is exposed to during drying. Simply put, the yellow honeys have less mucilage left after being mechanically washed.
